Beetroot and Fetta Salad

You can serve it at any season. You can combinate it with falafel roast chicken or grilled fish.

Ingredients:

100g baby spinach
50g radicchio
50g rocket
400g beetroot (cooked)
6 pcs spring onions
50g walnuts
200g reduced-fat feta cheese
10g fresh mint
For dressing:
10g fresh mint
100ml olive oil
1 pcs lemon (juice)
5 tbsp honey
1 tbsp dijon mustard
Instructions:
Put the choped beetroot, spinach, rocket, radicchio, spring onion, walnuts and fresh mint into large salad bowl.
Create the dressing by mixing together the mint, oil, lemon juice, hoeny dijon mustard i n kitchen processor.
Pour the dressing over the salad and mix lightly. Add the feta and walnuts just before serving.
