Sundried Tomato & Tahini Salad

Ingredients:


130 g lentils (drained)

225 g spinachoke (drained)

80 g artichoke (drained)

225 g spinach

½ cucumber (chopped)

2 tbsp tahini

2 tsp apple cider vinegar

1 tbsp tamari or soy sauce

1 tsp honey


Instructions:

  1. Prepare the vegetables and place them in a large bowl.

  2. Mix together the dressing ingredients (tahini, vinegar, tamari & honey), season with salt and pepper, and drizzle over the salad. Mix well, divide onto two plates and serve
