Halloumi Burgers

Halloumi is a traditional Cypriot cheesse made from mixture of goat's and sheep's milk, sometimes it can be also cow's milk. It has a high melting point and so can easily be fried or grilled.

Cooking time: 15-20 mins
Ingredients:
125 g block halloumi cheese (cut into 4 thick slices)
1/2 tbsp olive oil
2 pcs burger buns (we used Thin Buns)
2 tbsp hummus
1 pcs tomato (large ripe sliced up)
1 hand lettuce leaves
1 tbsp fresh tomato salsa (pre bought)

Instructions:
We use a gas BBQ for this one! So light it up. Cover each side of all the halloumi slices with some olive oil and cook them on each side until it's golden (3 mins).
Toast your buns on the inner side of the bun (toast not burn). Then add the hummus on the lower part of the burger bun. Add some tomato and then add the golden-brown halloumi. Finish with some lettuce and salsa before drooping the top bun on. Use a skewer stick to hold the burger together and serve up.
