Edamame Guacamole

Teaming up the classsic combination of beans and avocado cuts the fat and ups the protein in my quirky take on this Mexican favourite - serve with slices of toasted wholemeal bread. More substantial and satisfying than the original, yet every bit as delicious.
Portion: 200 g
Prep time: 10 min

Ingredients:
100 g edame beans (cooked)
2 pcs avocado
1/2 pcs lime (zest)
1/2 pcs red onion
1 pcs red chilli
salt, pepper
Instructions:
Blitz the cooked edamame beans in a food processor until you have smooth purée, then scrape into a serving bowl.
Mash the avocados, then add finely diced red onion and chilli.
Mix through the remaining ingredients and serve.
