Cous-Cous Chicken Salad

Ingrdients:


100 g cous-cous
300 g chicken breast
60 g onion
20 g tomato paste
1 tbsp olive oil
1 tsp chilli
10 g almond (sliced, peeled)
handful fresh peppermint
salt
pepper

Instructions:

  1. Put the couscous into a large bowl, add salt, pour boiling water and cover the bowl with kitchen foil.

  2. Wash the chicken breast and cut it into thin strips. Pan fry the meat over high heat. After 2-3 minutes add finely chopped onion and pan fry for another 2-3 minutes.

  3. Meanwhile mix the tomato paste, chilli, salt and pepper in some small bowl.

  4. Finally turn off the heat and add that tomato paste mixture into the pan.

  5. Place the almonds and peppermint on the top.
