Sweetpotato and Chickpea Marocan Soup

This is a healthy vegan version of classic Marocan soup with planty of turmeric, cumin and marocan ingredients. It is low in fat and calories, where each ingredients offering different health benefits.

Portions: 6-8

Cooking time: 40 min


Ingredients:


1 pcs capsicum pepper

1 pcs carrot

1 pcs sweetpotato (large)

400 g (1 tin) chickpea

2 cloves garlic

1 tsp cumin

1 tsp chilli flakes

700 ml stock (chick. or veget.)

1 tbsp vegetable oil

1 tsp coriander

1 tsp garam masala

1 tsp turmeric

salt, pepper

Instructions:

  1. Heat the oil in medium pot, saute diced carrots, sweetpotato and capsicum pepper for 5 minutes. After that add garlic and grounded cumin. Saute for 1 minute.

  2. Add stock and whole chickpea tin. Simmer for 20 minutes until sweetpotato is cooked.

  3. Finally, blits quarter of the soup and mix together. Add chopped coriander and garam masala
