Chicken Vesuvio

Ingredients:


3 g garlic (raw)

125 ml wine (white, dry)

2 g lemon peel

14 g lemon juice (fresh, weighed as whole fruit)

4 g oregano

120 g peas (frozen, raw)

125 g chicken (leg quarter, raw, meat and skin)

220 G potatoes (new and salad, fresh only, raw)

118 g onion (red, raw)

Instructions:


  1. Place chicken skin down to a medium pan over medium-high heat and panfried untill crispy skin turn and panfried another 2 minutes. Then revove it.

  2. Cut potatoes and red onion into wedges and place into the pan and panfried until golden colour. Place all into baking tray with the chicken on top

  3. In the same pan make peper sauce. Add garlicand pure white wine and sote for minute on medium heat. Add lemon zest and chop oregano
