Broccoli Soup with Cheddar Cheese

Broccoli soup is a delicious and nutritious dish made primarily from the vegetable broccoli. It is a popular choice among soup lovers and is known for its vibrant green color and rich flavor.

Broccoli stems can be steamed or boiled until tender and then enjoyed as a side dish added to soups, or used in dtir-fries. They retain their crunchiness and provide a delightful texture to the dishes.

Ingredients:

2 pcs broccoli

2 pcs schalotte

1 tsp chilli flakes

1 tsp ground cumin

40 g cheddar cheese

800 ml stock

salt, pepper


Instructions:

  1. Peel broccoli stemps place into food processor, chopped roughly.

  2. Chop chalotte and add into pan with heated oil.

  3. Sauteed for 2 minutes then add ground cumin and chilli flakes . Poor boiling stock into sauteed mix. Cook for 5-8 minutes, add salt, pepper and diced cheddar cheese.

  4. Blend until smooth.


Serving tips: you can add chickpeas, anchovies, peas, chicken or roasted almonds
